Ingredients

2-- eggs, boiled
1-- egg white, boiled
1-- avocado
1/4-- lemon, juiced
1/2teaspoon salt
1/4teaspoon black pepper
1/2cup chopped scallions
1/2cup chopped watercress
6slices 100% whole wheat bread
-- Dijon mustard (just a glaze on each slice of bread)

Instructions

  1. Boil 3 eggs. 
  2. Peel the eggs, cut in halfs and place them in a large bowl.  I removed one egg yolk to make it healthier.
  3. Add the avocado.
  4. Add the juice of 1/4 of a lemon, this will prevent the avocado from browning.
  5. Season with salt and black pepper.
  6. Add the scallions & watercress.
  7. Run a knife through the eggs and avocado several times – to mix and create a chunky texture.  
  8. Take 2 slices of bread and trim off the edges.
  9. Take a small amount of Dijon Mustard ( I urge you to pick up the brand I purchased from Whole Foods ) and just glaze it on each slice of bread.
  10. Top with 2 to 3 spoonful's of the avocado-egg mixture. 
  11. Top with the other slice of bread and slice in half.
