Black Bean Breakfast Burrito

This is one protein-packed, high-fiber start to the day and all for just over 300 calories.

Ingredients

3 eggs
1/4cup fat-free milk
1/4teaspoon salt
1/8teaspoon pepper
1/2cup canned black beans, drained and rinsed
1/4cup salsa
2 (8-inch) whole wheat tortillas

Instructions

  1. Whisk together the eggs, milk, salt, and pepper.
  2. Heat a small, non-stick skillet sprayed with olive oil over medium heat. Once hot, pour in the eggs and scramble until nearly firm. Add in the beans and salsa and cook until moisture is absorbed.
  3. Spoon 1/2 of the egg and bean mixture over each tortilla and serve hot.
