Cardamom Spiced Freekeh

Cardamom, coconut milk, and honey complement the freekeh perfectly, making this a delicious, healthy dessert.
Ingredients
- 1 8-ounce package of cracked freekeh (1 cup)
- 1 13.5-ounce can of light coconut milk
- 2tablespoons ground cinnamon
- 1/2teaspoon ground cardamom
- 1/2cup blue agave nectar, honey, or brown rice syrup
- 1cup prunes or dates, pitted and chopped
- 4tablespoons natural butter substitute or butter
- 2teaspoons vanilla extract
- 1/2cup pistachios, chopped (preferably unsalted)
Instructions
- Pour the coconut milk into a measuring cup and add water until you have 2 1/2 cups of liquid. Add liquid to sauce pan.
- Add freekeh and bring to a boil, cooking for 1 minute.
- Mix in all other ingredients except for the nuts and reduce heat to low.
- Cover and simmer for about 25 minutes.
- Remove from heat, top with pistachio nuts and serve immediately.
- options: Try adding dried apricots, chopped almonds or sprinkle dark chocolate shavings on top for variety next time.
