Cauliflower-Crust Pizza

Ingredients

Cauliflower Crust
1large head cauliflower (or two small ones)
5tablespoons cornmeal
2medium eggs
1teaspoon mixed dried herbs
1/2teaspoon garlic powder
1pinch Himalayan pink salt
1tablespoon rapseed, olive or coconut oil (for greasing the paper)
Pizza Sauce
1/2cup canned chopped tomatoes
2-4 leaves fresh basil
1stalk green onion, chopped
1clove garlic
1pinch Himalayan pink salt
Toppings
7 cherry tomatoes, halved
1 handful spinach
1/2cup light Feta cheese, crumbled
1medium red bell pepper, sliced
3 mushrooms, diced
1stalk green onion, chopped
6 black olives, pitted
2slices turkey bacon, optional

Instructions

Cauliflower Crust:

  1. Preheat oven at 300F with the pizza pan or tray inside.
  2. Quarter cauliflower head and remove greens and center. Place remaining cauliflower in a food processor, and process until it looks finely ground.
  3. Put processed cauliflower in a microwavable bowl and microwave for 10 minutes. Once microwaved, allow it to cool, about 10 – 15 minutes, until able to be handled. Once cooled, use a pillowcase or cheesecloth to strain the cauliflower, removing as much moisture as possible; the remaining cauliflower should be very dry.
  4. In a large bowl, use hands to mix all pizza base ingredients until a doughy consistency is reached. If the dough is too wet, add more corn flour one tablespoon at the time until desired consistency is reached.
  5. Grease a large piece of aluminum foil or parchment paper with oil; remove tray from oven and place greased paper on tray.
  6. Evenly spread pizza dough on tray about ¼ inch thick, and place in the oven for 20 minutes.

Pizza Sauce:

  1. In a food processor, combine all sauce ingredients and process until desired consistency is reached; for a smoother consistency, process for longer.

Assembly:

  1. Ladle sauce evenly over pizza base and add toppings.
  2. Put pizza back in the oven for 10 – 15 minutes, until vegetables have softened and are slightly charred around the edges.
