Cucumber-Raisin Raita

Ingredients
- 1 1/2cups plain fat free yogurt
- 1teaspoon grated lemon zest
- 1tablespoon chopped fresh mint leaves
- 1teaspoon granulated sugar
- 1/2teaspoon ground cumin
- 1/4teaspoon cayenne pepper
- 1cup English cucumber, peeled, seeded and diced 1/4-inch
- 1cup California raisins
- 1teaspoon kosher salt
- 1/2teaspoon freshly ground pepper
Instructions
- Set a strainer lined with a paper coffee filter over a bowl. Place the yogurt in the filter and let it drain for 3 to 4 hours.
- Turn the thickened yogurt into a mixing bowl. Fold in the remaining ingredients and season with salt and pepper.
