Fruit Glazed Shrimp

Ingredients
- 2 mangoes, chopped
- 1cup orange juice
- 2cloves garlic, finely chopped
- 1/4cup apple cider vinegar
- 1/4cup sugar
- salt, to taste
- 1 1/2pounds peeled shrimp
Instructions
1. In a saucepan combine mangoes, orange juice, garlic, vinegar and sugar and bring to a simmer. Cook for 10 minutes, stirring often, until mango is soft and glaze has thickened. Let mixture cool, then transfer to a blender and process until smooth. Return to pan and continue to thicken if necessary.
2. Place shrimp on skewers and season with salt. Heat grill to medium high heat; grill shrimp for 3 minutes, or until pink and beginning to brown. Flip and brush with glaze and continue to cook. Serve hot with sliced scallions and additional fruit glaze on the side.
