Green Hand Rolls with Brown Rice

Ingredients
- 1cup short grain brown rice
- 2teaspoons rice vinegar
- 2teaspoons mirin
- 1 avocado, thinly sliced
- 3 scallions, thinly sliced
- 1/2small cucumber, thinly sliced
- 2tablespoons toasted sesame seeds
- 4 nori sheets, halved
- Soy sauce, to serve

Instructions
- Rinse the rice under cool water, then boil 2 cups of water. Add the rice then bring back to a simmer, cover and turn to low until all the water is absorbed. Place rice in a large bowl then sprinkle with rice vinegar and mirin. Season to taste with salt.
- Place 2 tablespoons of rice on 1/4 of halved nori sheet, top with avocado, scallions, cucumber and a sprinkle of toasted sesame seeds. Roll into a cone shape so that all the filling stays in the cone. Repeat using remaining ingredients and serve with soy sauce and wasabi.
