Indonesian Curry Cucumbers

You can leave out the jalapeno or use any chile you prefer. For a more pronounced curry flavor, toast the curry powder in a dry skillet over medium heat 1 minute before adding to the recipe. Top the cucumbers with roasted peanuts and toasted coconut.
Ingredients
- 2cups (1/4-inch-thick) sliced cucumbers
- 1-- Granny Smith apple, peeled, halved, cored and sliced 1/4-inch thick
- 1-- orange, peeled, halved, sliced 1/4-inch thick
- 1/2-- red bell pepper, cored, seeded and thinly sliced
- 4-- scallions, thinly sliced
- 2tablespoons lime juice
- 1tablespoon honey
- 1tablespoon soy sauce
- 2teaspoons curry powder
- 1small jalapeno pepper, seeded and minced
Instructions
- Combine all ingredients in a nonreactive large mixing bowl and refrigerate 20 minutes before serving.
