Indonesian Curry Cucumbers

You can leave out the jalapeno or use any chile you prefer. For a more pronounced curry flavor, toast the curry powder in a dry skillet over medium heat 1 minute before adding to the recipe. Top the cucumbers with roasted peanuts and toasted coconut.

Ingredients

2cups (1/4-inch-thick) sliced cucumbers
1-- Granny Smith apple, peeled, halved, cored and sliced 1/4-inch thick
1-- orange, peeled, halved, sliced 1/4-inch thick
1/2-- red bell pepper, cored, seeded and thinly sliced
4-- scallions, thinly sliced
2tablespoons lime juice
1tablespoon honey
1tablespoon soy sauce
2teaspoons curry powder
1small jalapeno pepper, seeded and minced

Instructions

  1. Combine all ingredients in a nonreactive large mixing bowl and refrigerate 20 minutes before serving.
