Mediterranean Chopped Salad

Ingredients

2cups chopped red bell peppers
1cup chopped yellow or orange bell peppers
1/2cup chopped red onions
1cup chopped, seeded tomatoes
1tablespoon extra-virgin olive oil
2tablespoons red wine vinegar
1cup minced fresh basil leaves
1/4cup minced flat leaf parsley
-- Kosher or sea salt
-- Freshly ground black pepper

Instructions

  1. Place all ingredients in a large mixing bowl and toss with a spoon to combine well. Let marinate 15 minutes.
