Raw Beets with Jicama, Apple & Mustard Dressing

Ingredients
- Beets
- 1cup kale, thinly sliced
- 1cup raw red beets, match stick cut
- 1cup jicama, match stick cut
- 3/4cup raw apple, with skin, match stick cut
- 2tablespoons cilantro, chopped
- 1 lime, zested
- Dressing
- 1/4cup plain nonfat Greek yogurt
- 1teaspoon fresh ginger, grated
- 2tablespoons honey
- 1/4cup sherry vinegar
- 3teaspoons yellow mustard
- 1tablespoon raw onions, minced
- 1teaspoon raw garlic, grated
- 1teaspoon dried tarragon, chopped
- 1teaspoon raw red hot chili peppers, minced
Instructions
- Whisk dressing ingredients together.
- Toss the raw vegetables with the dressing. Serve immediately.
