Shrimp and Grits

Ingredients
- Grits
- 2/3cup dry quick-cooking grits
- 2 1/2cups water
- 3/4teaspoon Kosher salt
- 1/2cup milk
- 2teaspoons butter
- Shrimp
- 1tablespoon butter
- 1tablespoon olive oil
- 1/4teaspoon dried oregano
- pinch of red pepper flakes
- juice of one lemon
- 1-2tablespoons hot sauce
- 1/4teaspoon kosher salt
- 12ounces medium-sized shrimp, peeled and deveined
Instructions
To prepare grits:
- Combine grits and water in a medium saucepan. Bring to a boil over medium-high heat; reduce heat and simmer 5 minutes.Stir in milk and butter.Continue cooking an additional 1 to 2 minutes or until thickened.
To prepare shrimp:
- Combine butter and next 6 ingredients (through salt) in a large non-stick skillet; bring to a boil.
- Add shrimp, and cook 5 minutes, stirring occasionally, or until shrimp are done.
