If you’ve ever struggled to come up with the perfect veggie pairing for taco night, you’ll love this sweet/spicy salad. Substitute thawed corn if fresh isn’t available.

Ingredients

4 ears corn, kernels removed
1 can black beans, drained and rinsed
1small red bell pepper, diced
1/2 red onion, diced
1/4cup cilantro, chopped
Juice of 1/2 lemon
2ounces queso fresco or feta, crumbled
1/2teaspoon smoked paprika
1/4teaspoon salt

Instructions

  1. Mix all ingredients together in a large bowl. Adjust seasoning to taste. Refrigerate before serving if desired.
