Smoky-Sweet Corn Salad

If you’ve ever struggled to come up with the perfect veggie pairing for taco night, you’ll love this sweet/spicy salad. Substitute thawed corn if fresh isn’t available.
Ingredients
- 4 ears corn, kernels removed
- 1 can black beans, drained and rinsed
- 1small red bell pepper, diced
- 1/2 red onion, diced
- 1/4cup cilantro, chopped
- Juice of 1/2 lemon
- 2ounces queso fresco or feta, crumbled
- 1/2teaspoon smoked paprika
- 1/4teaspoon salt
Instructions
- Mix all ingredients together in a large bowl. Adjust seasoning to taste. Refrigerate before serving if desired.
