Spicy Black Beans with Chipotle and Lime

Ingredients

1-- (29-ounce) can black beans
1/2-- red onion, minced
1/2teaspoon ground cumin
1teaspoon dried oregano
1teaspoon minced chipotle chiles in adobo
-- Juice of 1 lime
1/4cup minced cilantro
-- Salt, to taste

Instructions

  1. Place all ingredients except cilantro and salt in a medium nonreactive saucepan and bring to a boil over medium-high heat. Reduce heat and simmer 20 minutes uncovered. Add salt and cilantro.
