Zucchini Carrot Gratinee

Ingredients
- 2cups grated zucchini
- 2cups shredded or matchstick carrots
- - salt and pepper
- 2tablespoons grated Parmesan cheese
- 2tablespoons broken walnuts
Instructions
- Grate zucchini in a food processor fitted with a grating blade or with a hand grater.
- Place zucchini and carrots in a microwave-safe bowl. Microwave on high 3 minutes.
- Remove and add salt and pepper to taste. Toss well.
- Sprinkle Parmesan cheese and walnuts on top. Microwave 30 seconds. Divide between 2 dinner plates.
