Pesto is a wildly versatile blend of fresh basil, pine nuts, garlic, olive oil and parmesan cheese. An excellent topping for meat, fish, poultry, and vegetables (not to mention a great dip and sandwich spread), pesto doesn't have to be limited to the basics. Sure, basil is delicious and traditional, but alternate fresh herbs and nuts can create mouthwatering variations in a snap. Plus, the addition of broth to cut back on oil lightens our recipes. Pesto, please!
