Eggs got a bad rap for decades, because doctors believed that eating foods high in cholesterol caused high cholesterol. We now know that the connection isn’t so straightforward, and that most of the cholesterol in our blood is made in our liver from the fats we eat. Trans- fats and saturated fats raise cholesterol levels the most.
Recently, Harvard researchers compared the consumption of eggs with the health of more than 115,000 men and women over eight to 14 years, and concluded that healthy people can eat an egg a day without raising their cholesterol to harmful levels.
