Amy Tong of Anaheim, Calif., can’t remember a time when she wasn’t in the kitchen. “I was my parents’ little ‘sous chef,’ passing seasonings to them while they cooked,” says the mom of two. This hearty salad, Amy’s contribution to the Spry Healthy Recipe Project, earned her a trip to New Orleans as part of the Zatarain’s Jazz It Up Sweepstakes. “I became more health-conscious when I was pregnant,” says Amy, age 39. “I incorporate more whole grains, veggies and fruit into my family’s diet.”
