For the weight-conscious, Alfredo pasta typically gets relegated to the “do not eat” category. After all, traditional Alfredo sauce is packed with heavy cream, butter and Parmesan cheese—delicious, yes, but not exactly waistline-friendly. Problem solved: replicate the creamy white sauce using pureed cauliflower, white beans and nondairy milk. The end result is just as rich-tasting and satisfying as what you’d get at Olive Garden, but with much more protein and fiber and considerably less fat and calories.
