If you’ve gone vegan, traditional bacon-and-egg breakfasts are out. But that doesn’t mean you can’t enjoy a yummy, nutritious breakfast. These ideas will get you out of the door in minutes, ready to start your day!

Superfast smoothie. Puree a couple of handfuls of frozen fruit with almond, rice, soy or coconut milk for a healthy, high-protein start to your day.

Bagel with hummus or applesauce. Choose a whole-grain bagel and get a fiber boost with these toppings.

Rice pudding—the morning version. Microwave leftover brown rice for 30 seconds, mix in rice milk with raisins, mangoes or other fruit and a touch of cinnamon.

Veggie sausage muffin. Zap a veggie sausage patty in the microwave, slide onto a toasted whole-grain English muffin, and enjoy!
