Summer Veggie Salad
Combine 1 cup cooked corn and 1 cup cooked peas with cherry tomato halves, olive oil, finely chopped fresh dill, torn basil leaves and salt and pepper (if preferred). Recipe adapted from The Mediterranean Diabetes Cookbook.

Quick Mango Salsa
In a bowl, combine peeled, diced mango, minced red onion, diced red pepper, finely chopped cilantro, fresh lime juice, minced jalapeno, extra-virgin olive oil and salt and pepper (if preferred). Recipe adapted from The South Beach Diet Super Quick Cookbook.
Italian-style Zucchini Slices
Slice 8 small zucchini into 1/2-inch pieces and saute in a skillet coated with 1 teaspoon canola oil. Combine with a sprinkle of whole-wheat breadcrumbs, chopped fresh parsley and oregano, minced almonds and garlic, shredded Parmesan cheese and pepper to taste.
