Ancho Rubbed Chicken

Ingredients
- 4-- each 8 ounce chicken breast ( skin on )
- 2tablespoons tablespoons ancho powder
- 2teaspoons teaspoons paprika
- 2teaspoons teaspoons ground cumin
- 1/2teaspoon cayenne pepper
- 3/4teaspoon kosher salt
- 1 1/2tablespoons canola oil
- 10whole cloves
- 2cups veal stock ( sub beef stock if can't find )
- 1/2cup water
- 1/2cup spanish onion sliced
- 1/4cup light brown sugar packed
- 1/4cup ancho chili powder
- 1 1/2teaspoons instant coffee granules
- 1 1/2teaspoons Worcestershire sauce
- 1/2teaspoon cayenne pepper
- 1/2teaspoon kosher salt
- 1stick unsalted butter cut into 8 pieces
- 1-- each lime cut into 8 pieces
Instructions
Rub:
2 tablespoons Ancho powder, 2 teaspoons Paprika, 2 teaspoons ground cumin,
1/2 teaspoon caynne pepper.
Chicken:
Pat dry
Rub with rub, roll in olive oil, re rub in rub.
Wrap in plastic, chill 1 hour.
Make Sauce:
In a sauce pan:
Finely grind cloves, add veal stock, water, onion, sugar, chili powder, coffee granules, Worchester sauce, caynne pepper and salt.
Cook at med high heat for about 30 mins. reducing to 1 cup.
Strain mix with fine sieve, pressing all stock.
Return to sauce pan, bring to a simmer, add butter. Take off heat.
To Cook:
Preheat oven to 400.
In a shallow pan, put in oven for about 10-12mins ( 160 degrees internal temp )
Take out, allow to rest 5 mins.
To Plate:
Sauce on bottm, chicken on top.
