Asian Greens

  • Yield: 4 to 6 servings


1-- (3-ounce) package Ramen noodles, broken up, discard seasoning packet
1/2cup sliced almonds
4cups shredded Napa cabbage
4cups baby spinach
1-- cucumber, peeled and sliced
1-- red bell pepper, cored and cut into thin strips
1bunch green onions, chopped


  1. In nonstick skillet coated with nonstick cooking spray, cook noodles and almonds  over medium heat, stirring, until golden brown. Watch carefully. Cool.
  2. When ready to serve toss all ingredients together with your favorite dressing.
