Awesome Apple Snack Cake

1 1/2cups Whole Wheat Flour
3tablespoons Bran
1 1/2teaspoons Baking Soda
3/4teaspoon Cinnamon
1/4teaspoon Nutmeg
3cups Shredded Apples
1 1/8cups Honey
3/8cup Safflower oil
3/4cup Nuts (optional)
2medium Eggs, well beaten
3/4teaspoon Vanilla


  1. Combine dry ingredients.
  2. Stir in honey, oil and eggs.
  3. Add vanilla, then apples and nuts (optional).
  4. Mix well and put in greased 9 x 13 inch pan.
  5. Bake at 350 for 35 minutes or until it tests done.
