Baked Fish with Salsa Verde
- Yield: 4 servings
Ingredients
- 4pieces Tilapia or other favorite fish filet
- 1teaspoon olive oil
- 1pinch salt
- 1pinch pepper
- 1 1/2tablespoons olive oil
- 2tablespoons finely chopped fresh parsley
- 1tablespoon minced shallots
- 1 1/2teaspoons capers, rinsed and chopped
- 1small clove garlic mnced
- 1teaspoon lemon juice
- 1/2teaspoon anchovy paste (optional)
Instructions
1. Preheat oven according to directions for baking of your favorite fish filets.
2. Place fish filets in shallow baking dish, drizzle with oil and season with salt and pepper.
3. Bake fish according to directions for baking of your favorite fish filets.
To make salsa verde:
1. Combine oil, parsley, shallots, capers, garlic, lemon juice and anchovy paste (if using) in a small bowl. Season with salt and pepper.
2. Place baked fish filets on serving dish and spoon salsa verde on top of each filet and serve.
