Baked Mediterranean Shrimp

Ingredients
- 1pound large shrimp (16 to 20 count per pound), peeled and deveined
- 2tablespoons extra-virgin olive oil
- 2tablespoons white wine
- 4large garlic cloves, peeled and minced (about 1 tablespoon)
- 2tablespoons capers (see sidebar, this page)
- 1/2cup pitted and sliced Kalamata olives
- 2medium tomatoes, peeled, seeded, and cut into 1/2-inch dice
- 1/4cup chopped fresh basil
- 2tablespoons chopped fresh flat-leaf parsley
- 1cup (4 ounces) crumbled feta cheese
- 1/4teaspoon dried red pepper flakes, or to taste Grated zest of 1 lemon
Instructions
1. Position a rack in the middle of the oven and preheat the oven to 375 F.
2. Place all the ingredients in a large bowl and stir gently to combine.
3. Transfer the mixture to a 9 x 12-inch baking dish. Bake until the shrimp is just cooked through, 15 to 25 minutes depending on the size of the shrimp.
4. Remove the baking dish from the oven, and divide the shrimp and sauce among shallow bowls. Serve warm or at room temperature.
