Reducing everyday balsamic vinegar with a little sugar and some spices transforms it into a rich, luxurious syrup with all the flavor of expensive aged balsamic vinegar. Serve on everything from salad greens and pasta to ice cream and berries.

Ingredients

1 1/2cups balsamic vinegar
1/2cup firmly packed brown sugar
2-- star anise
2sticks cinnamon

Instructions

  1. Combine all ingredients in saucepan. Simmer until reduced by one-third. Cool. Makes about 1 cup.
