Bean and Corn Salad

Ingredients

2cups frozen whole kernel corn, thawed
1-- red or green bell pepper, seeded and chopped
1medium tomato, chopped
1-- (15-ounce) can garbanzo beans or chickpeas, drained and rinsed
1-- (15-ounce) can black beans, drained and rinsed
1-- (15-ounce) can pinto beans, drained and rinsed
1bunch green onions, sliced
1/4cup red wine vinegar
1/4cup olive oil
2tablespoons chopped parsley
2tablespoons lime juice
1/2teaspoon dried cumin
1/4teaspoon pepper
dash salt
1tablespoon chopped jalapeno pepper
1teaspoon minced garlic

Instructions

  1. In a large bowl, combine all ingredients; mix well.  Serve immediately or cover and refrigerate until serving time.
