Bean and Corn Salad

Ingredients
- 2cups frozen whole kernel corn, thawed
- 1-- red or green bell pepper, seeded and chopped
- 1medium tomato, chopped
- 1-- (15-ounce) can garbanzo beans or chickpeas, drained and rinsed
- 1-- (15-ounce) can black beans, drained and rinsed
- 1-- (15-ounce) can pinto beans, drained and rinsed
- 1bunch green onions, sliced
- 1/4cup red wine vinegar
- 1/4cup olive oil
- 2tablespoons chopped parsley
- 2tablespoons lime juice
- 1/2teaspoon dried cumin
- 1/4teaspoon pepper
- dash salt
- 1tablespoon chopped jalapeno pepper
- 1teaspoon minced garlic
Instructions
- In a large bowl, combine all ingredients; mix well. Serve immediately or cover and refrigerate until serving time.
