Black Bean Salad
- Yield: 6-8 servings
- 1can Black Beans - drained
- 1can Whole Kernel Corn - drained
- 1medium Avocado - diced
- 1medium 3/4 of a Red Onion - diced
- 1medium Red Tomato - diced
- 1cup any brand of Salsa
In a large bowl, combine the beans, corn, avacado, red onion, tomato and the salsa.
Stir well. Chill overnight for best taste. Garnish with olives or fresh cilantro leaves.
