Black Twig Apple Muffins

Ingredients
- 1-3/4cup all purpose flour
- 1-1/4cup sugar
- 1teaspoon baking soda
- 1teaspoon cinnamon
- 1/2teaspoon salt
- 1/2teaspoon ground clove
- 1/8teaspoon freshly grated nutmeg
- 1cup peeled, cored and chopped tart apple
- 2/3cup raisins
- 1/2cup vegetable oil
- 1tablespoon wheat germ
- 2-- eggs, room temperature
- 1/2cup finely chopped walnuts
Instructions

Preheat oven to 325F.

Grease 12 muffin cups and dust with flour.

Sift 1 ¾ cups flour, sugar, soda, cinnamon, salt, cloves and nutmeg into large bowl. Mix in apple, raisins, oil and wheat germ. Stir in eggs. Blend in nuts (batter will be stiff).

Place 2 tablespoons batter in each muffin cup.

Bake until tester inserted in centers comes out clean, about 40 minutes. Remove from cups. (Can be prepared 1 day ahead. Store airtight.)
