Blueberry Freeze
- Yield: 4 servings
Ingredients
- 1cup frozen blueberries
- 1cup frozen banana chunks
- 1 1/2 to 3cups fortified vanilla soy- or rice milk
- 1/4cup apple juice concentrate
Instructions
- Place all ingredients into blender. Process on high speed until smooth, 2 to 3 minutes, stopping blender occasionally to move unblended fruit to the center with a spatula. Serve immediately.
Note: To freeze bananas, peel them, then cut or break them into 1-inch pieces. Pack loosely into airtight containers or freezer bags.
