Bourbon Brown Sugar Cupcakes

Bourbon Brown Sugar Cupcakes recipe.

Rich and decadent with a hint of bourbon flavor, these cupcakes are sure to be a crowd-pleaser for vegans and non-vegans alike.


For the cupcakes
1/2cup soy yogurt
2/3cup almond milk
1/4cup applesauce
3tablespoons canola oil
1/4cup bourbon
1tablespoon vanilla
3/4cup packed brown sugar
1/4teaspoon all spice
1 1/4cups flour
2tablespoons cornstarch
3/4teaspoon baking powder
1/2teaspoon baking soda
1/4teaspoon salt
For the frosting
2tablespoons softened vegan butter
2cups powdered sugar
3tablespoons almond milk
2tablespoons brown sugar
1/4cup pecans
1tablespoon brown sugar


  1. Pre heat the oven to 350.
  2. Line a 12 cup muffin tin with liners.
  3. In a large bowl whisk together the yogurt, almond milk, applesauce, canola oil, bourbon, sugar & vanilla. sift in flour, cornstarch, baking powder, baking soda, all spice and salt. Mix.
  4. Fill cupcake liners 3/4 of the way full. bake 22-24 minutes or until a tooth pick comes out clean when tested in the center of the cupcake. transfer to a wire cooling rack and cool completely prior to frosting.

To make the frosting

  1. In the bowl of a mixer beat butter and powdered sugar for about 30 seconds.
  2. On low/medium speed beat in almond milk until the frosting comes together.
  3. Stir in brown sugar.
  4. Frost fully cooled cupcakes and top with brown sugar & pecans.
