Bran Oatmeal Muffins

  • Yield: 5 to 6 dozen


2 1/2cups old-fashioned oatmeal
2cups bran cereal
2cups shredded wheat cereal
2cups boiling water
2/3cup canola oil
3/4cup light brown sugar
3/4cup sugar
4-- eggs
5cups all-purpose flour
5teaspoons baking soda
1tablespoon ground cinnamon
1quart buttermilk


  1. Preheat oven 400F. Line muffin pan with papers, or coat with nonstick spray.
  2. In large bowl, combine oatmeal, bran cereal, and shredded wheat. Add boiling water and set aside to cool.
  3. In mixing bowl, whisk together oil, brown sugar, and sugar. Add eggs, mixing well. Stir in cereal mixture.
  4. In another bowl, combine flour, baking soda, and cinnamon. Add dry ingredients to oatmeal mixture, alternating with the buttermilk, stirring only until combined.
  5. Pour batter into muffin tins. Bake 20 minutes or until lightly browned. Any unused batter may be stored in a covered container in the refrigerator.
