Bran Oatmeal Muffins
- Yield: 5 to 6 dozen
Ingredients
- 2 1/2cups old-fashioned oatmeal
- 2cups bran cereal
- 2cups shredded wheat cereal
- 2cups boiling water
- 2/3cup canola oil
- 3/4cup light brown sugar
- 3/4cup sugar
- 4-- eggs
- 5cups all-purpose flour
- 5teaspoons baking soda
- 1tablespoon ground cinnamon
- 1quart buttermilk
Instructions
- Preheat oven 400F. Line muffin pan with papers, or coat with nonstick spray.
- In large bowl, combine oatmeal, bran cereal, and shredded wheat. Add boiling water and set aside to cool.
- In mixing bowl, whisk together oil, brown sugar, and sugar. Add eggs, mixing well. Stir in cereal mixture.
- In another bowl, combine flour, baking soda, and cinnamon. Add dry ingredients to oatmeal mixture, alternating with the buttermilk, stirring only until combined.
- Pour batter into muffin tins. Bake 20 minutes or until lightly browned. Any unused batter may be stored in a covered container in the refrigerator.
