California Walnut Breakfast Cookies

California Walnut Board

3cups butter
1/2cup plus 2 tablespoons applesauce
6 3/4cups brown sugar
5cups pineapple, crushed (in juice)
1 1/2teaspoons vanilla
3tablespoons maple flavoring
10cups all-purpose flour
2 1/4cups nonfat dry milk
2tablespoons ground cinnamon
2tablespoons baking soda
1teaspoon salt
10cups oatmeal
6cups dates or raisins
6cups California walnuts, chopped


  1. Cream butter, applesauce and sugar in mixer bow. 
  2. Add crushed pineapple with juice, vanilla and maple flavoring. 
  3. Combine flour, dry milk, cinnamon, baking soda and salt.  Blend into creamed mixture. 
  4. Blend in oats, dates (or raisins) and California walnuts. 
  5. Using 16# scoop, drop cookie dough onto baking pan.  Flatten slightly. 
  6. Bake at 350F for 12 to 15 minutes in a conventional oven or at 325F for 10 to 12 minutes in a convection oven.
