Brussels sprouts were most likely the misunderstood food group of your childhood, but now we know how delicious they can be! This dish can serve as a great side or appetizer to add to a meal. Of course it adds a good health factor, but it also packs zest thanks to orange, lime, and lemon juice. And we can’t forget the chili flakes! These simple ingredients come together for one fantastic dish your friends will love.

Ingredients

2pounds Brussels sprouts
Roasted Garlic Vinaigrette
Sea salt and freshly ground black pepper to taste
Roasted Garlic Vinaigrette
1/2cup sautéed garlic
1/2cup lemon juice
1 orange, zested and juiced
1/4cup lime juice
2tablespoons honey
2tablespoons dijon mustard
1 1/2cup olive oil
Fresh Parmesan-Reggiano or Mimolette cheese (optional)

Instructions

  1. Fill a pot with enough water to cover the Brussels sprouts, then add salt and bring to a boil. Add sprouts. Remove when soft (about 1 minute), and then place into a bowl of iced water. Set aside.
  2. In a separate bowl, combine all vinaigrette ingredients except for oil. Blend mix, adding oil slowly to emulsify (until it looks creamy).
  3. Sauté blanched Brussels sprouts in a very hot pan (preferably cast iron) until nice and charred. (The more color the better!)
  4. Place sprouts onto a serving platter and drizzle with a generous amount of vinaigrette. Sprinkle with chili flakes, sea salt and freshly ground black pepper to taste. Top with fresh Parmesan-Reggiano or Mimolette cheese, if desired.
