Cherry Cola Cupcakes with Cola Frosting

These unique cupcakes will be the cherry on top of a fabulous dinner party.

Ingredients

1cup cola flavored soda
1teaspoon apple cider vinegar
3/4cup sugar
1/3cup canola oil
2teaspoons cola extract
1 1/3cups flour
3/4teaspoon baking soda
1/2teaspoon baking powder
36 maraschino cherries (2 inside each cupcake, and 1 on top. Leave these out if you want just plain cola cupcakes).
Cola Frosting
8ounces vegan cream cheese
1/4cup vegan butter, room temperature
2cups powdered sugar (add more if you prefer a thicker frosting)
2teaspoons cola extract

Instructions

Cupcakes

  1. Combine the soda and apple cider vinegar in a large bowl, and let stand for a few minutes.
  2. Add in the sugar and oil. Whisk together.
  3. Add cola extract, flour, baking powder, and baking soda and stir together.
  4. Fill cupcake liners about 3/4 full. Drop 2 cherries into the batter of each cake (stems removed).
  5. Bake at 350 for about 20 minutes or until the cupcakes spring back when lightly touched.

Cola Frosting

  1. Beat cream cheese and butter with an electric mixer.
  2. Mix in powdered sugar gradually until you reach desired consistency.
  3. Mix in extract.
  4. Spread or pipe on cooled cupcakes.
  5. Add another cherry on the top!
