Chicken Braised in Apricots and Pineapple

1-- chicken (cut-up)
1/2cup apricot preserves
1/4cup honey
2tablespoons lemon juice
1/4cup soy sauce
1/4cup hoisin sauce
1cup water
1-- can crushed pineapple
4cups cooked rice
-- Maraschino cherries
-- Parsley for garnish, optional


  1. Boil chicken 40 minutes; aside put all remaining ingredients except rice in a Dutch oven or electric Dutch oven heat on medium until hot. Add chicken and simmer 15 minutes. Stir ocassionally. Pour over rice. Garnish with maraschino cherries and sprigs of parsley.
