Chicken, Barley and Bow-Tie Soup

  • Yield: 10 to 12 servings


2 1/2pounds skinless, boneless chicken breasts, cut into 1-inch pieces
1cup chopped celery
1 1/2cups chopped onion
2cups thinly sliced peeled carrots
1-- bay leaf
1cup waer
1/2cup pearl barley
-- Salt and pepper to taste
1/2teaspoon dried basil
3-- chicken bouillon cubes
1-- (16-ounce) package bow-tie pasta


  1. Place chicken, celery, onion, carrots and bay leaf in a large pot filled with water.  Bring water to a boil add barley.  Reduce heat, cover and cook until chicken and barley are done, about 30 minutes.  Season with salt and pepper.  Add basil and bouillon cubes.
  2. Meanwhile, cook pasta according to package directions, omitting oil and salt.  Drain and set aside.  Remove bay leaf and add the pasta to chicken mixture.
