Chicken-in-a-Biscuit Fritters

Ingredients
- 1cup milk
- 2-- eggs
- 2cups biscuit mix
- 2tablespoons snipped fresh chives
- 1/2cup cheddar cheese
- 1/4teaspoon jarred minced or pureed garlic
- 2cups finely chopped cooked rotisserie chicken
- -- Vegetable oil
- 2tablespoons olive oil
- 1pound ground chicken
- 2teaspoons fennel seed
- 1teaspoon crushed red pepper flake
- 2tablespoons brown sugar
- 1teaspoon salt
- 1teaspoon black pepper
- 2cups sliced Vidalia onion
- 1/4cup flour
- 2cups chicken broth
- 1/2cup heavy cream
- 3tablespoons snipped fresh chive for garnish
Instructions
In a bowl, combine milk, eggs and biscuit mix. Stir in chives, cheese and garlic. Fold in chicken.
In a deep fryer or electric skillet of vegetable oil heated to 375 degrees, drop rounded spoons of dough. Fry until golden. Drain on rack over cookie sheet.
In a frying pan, heat olive oil. In a bowl, thoroughly combine chicken, fennel, crushed red pepper, brown sugar, salt and black pepper. Crumble into frying pan. Add onions and saute together until chicken is fully cooked and onions are translucent. Sprinkle with flour and cook another minute. Add broth, stirring contantly until thickened. Remove from heat and add cream.
Serve bowls of gravy with fritters, garnished with chives.
