Chicken-Grapefruit Stir Fry

Ingredients
- 2whole chicken breasts, boneless, and skinless, cit in 1-inch pieces
- 1tablespoon cornstarch
- 1/4teaspoon salt
- 1/8teaspoon cayenne pepper
- 2tablespoons soy sauce
- 3tablespoons cooking oil, divided
- 1cup green pepper strips
- 1/4cup chopped green onions, white and green parts included
- 1/2cup chicken broth
- 1cup frsh pink grapfruit sections
Instructions
In medium bowl, mix together cornstarch, salt, cayenne pepper, soy sauce and 1 tablespoon of the cooking oil. Add chicken to cornstarch mixture, turning to coat all sides; let stand 10 minutes. In large frypan, heat remaining 2 tablespoons cooking oil to medium temperature. Add chicken mixture and stir-fry 3 minutes or until light brown. Add green pepper strips, green onion, garlic, and chicken broth; stir to mix. Cover and cook on low heat about 4 minutes. Add grapefruit, cover and cook about 2 minutes or until grapefruit it heated.
