Chicken Kiwi Salad

1/4cup lime juice
2tablespoons honey
2tablespoons reduced-sodium soy sauce
1/2teaspoon ground ginger
2pounds cooked skinless, boneless chicken breasts, sliced
4-- kiwis, peeled and thinly sliced
1-- (8-ounce) can sliced water chestnuts, drained
1/4cup chopped red onion
8cups (loosely packed) washed torn romaine lettuce


  1. In a small bowl, combine lime juice, honey, soy sauce and ginger.  Pour 1/3 cup of this dressing (set remaining dressing aside) over cooked chicken slices in a large bowl and set aside to marinate at least 1 hour.  Then mix the kiwis, water chestnuts and red onion with marinated chicken slices.
  2. Line a serving bowl with romaine lettuce.  Combine chicken mixture and remaining dressing with lettuce, tossing gently.
