Chicken Napoleon Balsamico

Ingredients

3-- full chicken breasts
1-- eggplant sliced length wise
6-- Portobello mushrooms
3-- roasted red peppers
1pound of fresh mozzarella
1bunch fresh basil
1cup Italian flavored breadcrumbs
-- Flour for dredging
2-- Eggs scrambled
1cup good balsamic vinegar
4teaspoons of honey
1sprig of rosemary
2large garlic cloves
-- Salt and pepper
-- Garlic powder
-- Shaved parmesan cheese for garnish
-- Roasted Potatoes'
6-- 8 large Red Skin Potatoes, peeled and diced
2large Bermuda Onions, diced
-- Shake of Garlic Powder, dried thyme, salt and pepper
3-- 6 tablespoons olive oil

Instructions

Pre heat oven tempeture to 375 degrees
Butterfly chicken breasts so they are thin and consistent thickness
Slice in half to have 6 breasts, use meat mallet to tenderize.
Season breasts with Salt and Pepper, and garlic powder, saute for 2 – 3 minutes on each side in skillet, (being careful not to over cook) remove to drain.
Dip sliced eggplant in flour (shake off excess), egg wash, and then breadcrumbs
Place mushrooms (wiped clean) on cooking sheet (season w/ salt and pepper) and breaded sliced eggplant. Cook mushrooms and eggplant in oven for 20 minutes (turning once) until soft but still firm to handle. Eggplant should be crispy.

Roasted Potatoes

Pre heat oven to 475 degrees
In a large bowl, combine potatoes, onion, garlic, thyme, salt and pepper
Spread in a single layer on roasting pan or baking sheet
Roast approximately 25 minutes until brown, turning once.
Remove from oven, set aside.

Balsamic Reduction
On medium heat, bring the vinegar and honey and peeled garlic, sliced in 1/2 to a boil.
Add a sprig of rosemary
Reduce heat and simmer until the mixture is reduced to half. Should take about 10 to 12 minutes of simmering.
Mixture will thicken as it cools so be sure to time this correctly with your meal.
Remove and discard the rosemary and garlic.

To assemble Napoleons… (while potatoes are roasting)
In 9 x 11 casserole pan. (s)
Place 1/4 cup of balsamic reduction in bottom of baking dish.
Make neat stacks with
Chicken breast (s)
Eggplant slice
Mozzarella slice
Portobello mushroom (cut in half)
Roasted red pepper (cut in half)
Mozzarella slice

Reduce oven tempeture to 350 degrees
Return to oven for 20 to 25 minutes

Place on serving platter with roasted potatoes.
Drizzle w/ balsamic glaze, top with shaved parmesan and torn basil before serving
