Coffee-Spiced Thai Tofu Skewers

You can also add any favorite vegetables to the skewers. Just make sure you use vegetables that will cook in the same amount of time. The marinade can be made a day before marinating your skewers. If you have the time, marinate the tofu skewers overnight in the refrigerator. It is the best way to increase their flavor. For this recipe you will need 24 bamboo skewers.

Ingredients

Coffee Marinade:
1tablespoon Asian sesame oil
1/4cup low-sodium soy sauce
2tablespoons smooth or chunky peanut butter
1tablespoon curry powder
2tablespoons ground coffee
1tablespoon light brown sugar
2tablespoons lime juice
3-- garlic cloves, minced
1tablespoon minced ginger root
1teaspoon crushed red chiles
Tofu Skewers:
2pounds extra-firm or firm tofu cut into 1-inch cubes

Instructions

  1. To make marinade: Combine all ingredients and set aside.
  2. To make skewers: Thread tofu on wooden skewers and place in a baking dish. Pour marinade over, cover and refrigerate at least 2 hours or overnight if possible. Turn periodically if skewers are not covered in marinade.
  3. When ready to cook, preheat a gas or charcoal grill to medium heat. Remove skewers from marinade and cook 10 minutes, turning once. Or, preheat the broiler and place skewers on a broiler pan. Cook 3 inches from heat 6 to 8 minutes per side.
