Cucumber-Raisin Raita

1 1/2cups plain fat free yogurt
1teaspoon grated lemon zest
1tablespoon chopped fresh mint leaves
1teaspoon granulated sugar
1/2teaspoon ground cumin
1/4teaspoon cayenne pepper
1cup English cucumber, peeled, seeded and diced 1/4-inch
1cup California raisins
1teaspoon kosher salt
1/2teaspoon freshly ground pepper


  1. Set a strainer lined with a paper coffee filter over a bowl. Place the yogurt in the filter and let it drain for 3 to 4 hours.
  2. Turn the thickened yogurt into a mixing bowl. Fold in the remaining ingredients and season with salt and pepper.
