Curried Orzo Salad

Ingredients
- 1-- (16-ounce) package orzo
- 1 1/2cups chopped celery
- 1cup dark seedless raisins
- 1-- (8-ounce) can sliced water chestnuts, drained
- 1/2cup fat-free Italian dressing
- 1/3cup finely chopped onion
- 3/4cup plain nonfat yogurt
- 1tablespoon balsamic vinegar
- 1teaspoon curry powder
- 1/2teaspoon ground ginger
- 2tablespoons honey
- -- Salt
Instructions
- Cook pasta according to package directions, omitting any oil and salt.
- In a large bowl, combine pasta, celery, raisins and water chestnuts; mix well and set aside.
- In another bowl, combine Italian dressing, onion, yogurt, vinegar, curry powder, ginger, honey and salt, stirring well. Pour dressing mixture over pasta mixture and toss well. Cover and refrigerate until ready to serve.
