Deli Pasta Salad

  • Yield: 4 to 6 servings


1-- (12-ounce) package ziti or penne (tubular) pasta
1/2cup low-fat ricotta cheese
2tablespoons Dijon mustard
2tablespoons Dijon mustard
2tablespoons balsamic vinegar
1teaspoon sugar
1/4teaspoon pepper
1-- (10-ounce) package frozen peas, thawed
1cup diced baked ham, chicken or turkey
1/3cup chopped green onions
1/2cup chopped Roma (plum) tomatoes


  1. Cook pasta according to package directions, omitting any oil and salt.  Drain and set aside. 
  2. Meanwhile, mix ricotta, mustard, vinegar, sugar and pepper in a food processor or a blender until smooth, about 30 seconds. 
  3. In a large bowl, combine pasta, peas, ham, green onions and tomatoes.  Add ricotta mixture and toss.  Serve at once, or refrigerate.
