Easy White Chicken Chili

1pound dried Great Northern beans
1large onion, chopped
1teaspoon minced garlic
1tablespoon chopped jalapeno pepper
1tablespoon dried oregano
dash cayenne pepper
2teaspoons ground cumin
1pinch ground cloves
5cups canned fat-free chicken broth
1-- (10-ounce) can diced tomatoes and green chiles, drained
1/8cup lime juice
3cups chopped cooked boneless skinless chicken breasts
1/2cup chopped fresh cilantro (optional)
1/3cup grated Parmesan cheese (optional)


  1. Place dried beans in a large pot and cover with water.  Bring to a boil and boil for 1 minute.  Remove from heat, cover, and let stand of one hour.
  2. After one hour, add onion, garlic, jalapeno, oregano, cayenne, cumin, cloves and chicken broth.  Bring to a boil.  Reduce heat and simmer, covered, 1 1/2 hours.  Add tomatoes and chiles, lime juice and chicken.  Continue cooking, covered, over low heat 30 minutes, or until beans are tender.  Serve with chopped cilantro and Parmesan, if desired.
