Easy White Chicken Chili

Ingredients
- 1pound dried Great Northern beans
- 1large onion, chopped
- 1teaspoon minced garlic
- 1tablespoon chopped jalapeno pepper
- 1tablespoon dried oregano
- dash cayenne pepper
- 2teaspoons ground cumin
- 1pinch ground cloves
- 5cups canned fat-free chicken broth
- 1-- (10-ounce) can diced tomatoes and green chiles, drained
- 1/8cup lime juice
- 3cups chopped cooked boneless skinless chicken breasts
- 1/2cup chopped fresh cilantro (optional)
- 1/3cup grated Parmesan cheese (optional)
Instructions
- Place dried beans in a large pot and cover with water. Bring to a boil and boil for 1 minute. Remove from heat, cover, and let stand of one hour.
- After one hour, add onion, garlic, jalapeno, oregano, cayenne, cumin, cloves and chicken broth. Bring to a boil. Reduce heat and simmer, covered, 1 1/2 hours. Add tomatoes and chiles, lime juice and chicken. Continue cooking, covered, over low heat 30 minutes, or until beans are tender. Serve with chopped cilantro and Parmesan, if desired.
