Fruit Gazpacho
- Yield: 4-6 servings
Ingredients
- 1 honeydew melon, cubed
- 2 oranges, juiced
- 1 green apple, peeled and cubed
- 1/2 medium watermelon, cubed (about 4 cups)
- blueberries, to garnish
- olive oil, to garnish
Instructions
1. Combine honeydew, orange juice, apple and watermelon in a blender and process until smooth.
2. Divide between bowls, then garnish with blueberries and a drizzle of olive oil.
