Fruit Salsa Quesadillas

Fill the tortillas and bake just before serving.
Ingredients
- Fruit Salsa:
- 1cup chopped peeled peaches
- 1quart fresh strawberries, hulled and diced
- 1cup blueberries
- 1tablespoon honey
- 1/4cup sliced green onions (scallions)
- Quesadillas:
- 12-- (8-inch) flour tortillas, room temperature
- 1 1/2cups shredded part-skim mozzarella cheese
- -- Fruit Salsa
Instructions
- Combine the peaches, strawberries, blueberries, honey and green onions in a medium bowl.
- Preheat oven to 475F. Top half of each tortilla with 2 tablespoons cheese and about 1/4 cup Fruit Salsa. Fold over and place a toothpick at the end to hold the tortilla together. Place the filled tortilla on a baking sheet and bake for about 4 to 7 minutes or until lightly browned and the cheese is melted. Serve immediately.
