Cranberry-Cashew Chicken Wraps

- 4-- Boneless, Skinless Chicken Breasts
- 1cup of Dried Cranberries
- 1 1/2cups of store bought Chili Lime Spiced Cashews
- 1tablespoon Curry Powder
- 1tablespoon Salt
- 1/2tablespoon Pepper
- 1cup Mayonnaise
- 1/2cup Milk
- 8large Wraps
- 1cup Baby Spinach Leaves
In a shallow frying pan, bring a half cup of salted water to a simmer and add the four chicken breasts to poach.
Meanwhile, in a large bowl, combine the mayonnaise, milk, salt, pepper, and curry powder, mixing until combined. Add the dried cranberries and spicy cashews.
When the chicken breasts are fully cooked through, remove from the heat and chop into small (half of a bite-size) pieces. Add the diced chicken to the mayonnaise mixture. Combine all the ingredients.
Layout the wraps and add a few spinach leaves to each. Add the chicken salad, wrap up and enjoy your delicious, spicy chicken curry wraps.
