Garlic Mashed Potatoes with Soymilk

2 1/2pounds Yukon Gold potatoes
4-- garlic cloves, sliced
2/3cup plain unflavored soymilk
2tablespoons butter
1/2teaspoon salt
1/4teaspoon pepper


  1. Place potatoes and garlic in a saucepan; cover with water. Bring to a boil over medium heat, reduce heat and simmer 30 minutes or until potatoes are tender. Drain. Add soymilk, butter, salt and pepper. Beat with an electric mixer until smooth.
